R3Cipe – Breakfast Quiche
Preparation:
Estimated time: 45 – 60 min
Preheat the oven to 350 F. Steam broccoli till tender, drain well, and set aside. Coat the skillet with cooking spray, fry bacon until crisp. Lightly coat a 9-inch bread pan with cooking spray and set aside. Combine the egg product, salt and pepper in a large bowl, and then stir in the cottage cheese, broccoli, cheddar cheese, and bacon. Spoon the mixture into the pan. Bake, uncovered, for 40 to 50 minutes or until a knife inserted near the center comes out clean. Remove to a wire rack, and sprinkle with the mozzarella cheese. Cool 5 to 10 minutes before serving.
Slice into eighths when done. Enjoy!

2 cups | Liquid egg whites |
6 | Whole eggs |
1/2 cup | Low fat cottage cheese |
1/2 cup | Low fat cheddar cheese |
1/2 cup | Low fat mozzarella cheese |
12 slices | Lean turkey bacon |
2 combined cups | Mushrooms, spinach, onions, peppers, or any other vegetables of choice. |
